Would a granite kitchen bench provide any effective thermal mass?

It is athermal mass but the question is: Do you want a food preparation surface in the direct sun and do you want to prepare food on a warm surface?

Guess what? is right.
A sink bench of any material should be protected from direct sun unless it is early morning winter sun which lightly warms a cold granite bench.

After 10.00am, no sun should reach a bench and so in the southern hemisphere, the kitchen should ideally be positioned in the north east corner of the building shielded with 600 wide soffites east and 750 to the north.

The worst position for a kitchen is to the west where low angle summer sun will roast you, the reflection blind you off a stainless steel bench and heat your coffee resting on a black granite bench.
